What’s for dinner? – April 17, 2011
It’s beautiful day in the neighborhood here in the DC area – sunny, 60s, nice … Starting to think about meal this evening and haven’t really had any inspirations. Often, when I’m looking for a good idea, I go to one of my favorite resources – Rachel Ray! I have a few actual, hard-copy cookbooks from her and decided to browse through them while watching a “Burn Notice” marathon on USA …
Okay, I think I found it! Something I can make and easily keep warm and then prepare individual portions when the time comes – Only Son has to go to work at 5:30 and Beautiful Wife is at work for a long day and will be home at 8-8:30ish. So a “flexible” dish that can be made in advance and served whenever will be perfect.
How about “Sloppy Cubanos”? It’s kind of a variation on Sloppy Joes, but with a different spice mix and flavor and topped with cheese and pickles at the end a la a traditional Cuban Sandwich. I can make the filling and then toast the rolls, top with the cheese, broil, and garnish with the pickles when ready to serve. Perfect!
