Vegetable Meatloaf

An extra healthy version of a classic comfort dish …

Preheat over to 350 degrees.

  • 1 pound lean ground beef or turkey
  • 2 cups finely grated vegetables, your choice (carrots, zucchini, mushrooms, green beens, squash, green peppers, etc.)
  • 1 cup crushed crackers or bread crumbs
  • 1 egg
  • salt and pepper

Mix all ingredients until well blended.  Press into 8 inch x 4 inch loaf pan.  Bake for 50 minutes or until done.

After 20 minutes of cooking, pour off accumulated grease and continue cooking.
