What’s for dinner? – March 12, 2011

It’s Saturday and I’m just back from Only Son’s basketball game.  It was a playoff game in a county-run league, but unfortunately his team lost.  Oh well, he is going to a one of his best friend’s surprise birthday party tonight and it is Vegetarian Daughter’s last night here (so she’ll probably be out with friends), so I figure they’re both accounted for re: dinner this evening.  Have to figure out something for me and Beautiful Wife though!  Absolutely no ideas going through my head, but I’m thinking I might make the Shanghai Noodles I made a while ago, except use shrimp instead of chicken.  That way Vegetarian Daughter can have some when she gets home later in the evening.  Does anyone have any ideas?  Still thinking … Update:  As it … Read entire article »

Shrimp Newburg

Delicious, quick and easy! Juice of 1 lemon 2 bay leaves 2 1/2 pounds medium/large shrimp, peeled and deveined 1 tablespoon extra virgin olive oil 4 tablespoons butter 1 large shallot, finely chopped 2 tablespoons flour 1/2 cup chicken broth 1 cup heavy cream 3 tablespoons dry sherry 1/4 teaspoon nutmeg salt & pepper 1/4 cup bread crumbs 1/4 cup parmesan cheese 1 teaspoon paprika 2 tablespoons parsley Preheat broiler or oven to 425 degrees. Bring 3-4 inches of water to a boil in a large pot.  Add lemon juice, bay leaves and shrimp.  Simmer, cover and cook for 5 minutes. In a large skillet over medium heat, add olive oil, butter and shallots.  Sweat/soften for 2 minutes.  Add flour and cook another minute.  Whisk in chicken broth and thicken a minute or two.  Add cream and bring to a bubble.  Stir in sherry then season with nutmeg, salt … Read entire article »

What’s for dinner? – Feb. 28, 2011

I’m a Dad that likes to cook and does most of the cooking in my house.  My wife is a hard-working nurse and I love being able to serve her a delicious meal when she gets home.  I also have three children, two of which are away at college – two daughters at school and one son at home.  Son is a tenth-grader, 16 years old, so you know he can put the food away.  One of my daughters has relatively recently decided she is a vegetarian – but she’s away now so don’t have to noodle that too much now.  More about the family in the future … Today is Monday, February 28 and I am sitting on the couch in the living room looking out at a dreary, rainy … Read entire article »
