What’s for dinner? – April 19, 2011

Zucchini Latkes I’m thinking of making something kind of light and simple for dinner tonight, but not sure what.  It’s kind of a cloudy day, though not chilly.  Beautiful Wife is making zucchini bread in the kitchen … and she just said that she has a fair amount of extra, raw, grated zucchini.  “Can we make zucchini latkes?” she asks.  What an interesting idea! Took about two seconds to find a bunch of recipes online for zucchini latkes – most have some potato in the mix, and seem pretty similar to any other latke recipe, I suppose.  Here’s one that looks good – Zucchini Latkes – on the Food Network website.  I’ve also found a page called, “Not Your Grandmother’s Latkes”, with some interesting and different ways to serve them.  It mentions … Read entire article »

Joan’s Hot Dogs

This is a unique and delicious way of preparing jazzed-up hot dogs. It is great for big groups while watching a sporting event on TV or as something a little different for a pot luck. They really are delicious. I like a little bit of hot sauce on top! 1 pound hot dogs 3 hard-boiled eggs 3/4 pound sharp cheddar cheese 3 tablespoons chopped onion 1/4 cup chili sauce 1 tablespoon mayonnaise 1/3 cup chopped green olives 24 hot dog rolls Chop hot dogs and hard-boiled eggs. Mix with all other ingredients. Stuff into hot dog rolls and wrap individually in foil. Bake 20-30 minutes at 350 degrees. Unwrap and enjoy, but be careful and don’t burn your tongue!
