Southwest Chicken Salad

Ingredients

  • 4 cups torn romain lettuce
  • 4 grilled chicken breasts
  • 1 14 oz. can black beans, drained and rinsed
  • 1/2 red onion, sliced in rings
  • 2 cups chopped tomatoes
  • 1/2 cup parmesan cheese
  • 1 red pepper, cut in strips
  • 1 minced garlic clove
  • 3 tablespoons cilantro
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 jalapeno pepper
  • 1/2 teaspoon
  • 1/2 teaspoon chili pepper

Directions

Mix well and chill last seven ingredients for dressing. Layer romain lettuce in large serving bowl. Arrange in rows on top of lettuce: beans, onion, tomatoes, chicken, red pepper. When ready to serve, toss salad with dressing and parmesan cheese.
