Cheesecake Muffins

  • 2 – 8 ounce packages of cream cheese
  • 3/4 cup sugar
  • 2 eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • vanilla wafer cookies (or use Girl Scout Trefoils – shortbread cookies)

Prehead oven to 375 degrees.  Line muffin tins with cupcake baking cups (paper or foil) and place a cookie in each.  Beat cream cheese, sugar, eggs and lemon jiuce until creamy, light and fluffy.  Mix in vanilla.  Fill each tin 2/3 full with mixture (on top of cookie).  Bake 20 minutes until set.  Top with pie filling or chocolate sauce if desired.  This recipe makes 12 or so.
