Terrible quandry about dinner tonight!  Only Son has lacrosse game at 6, Beautiful Wife going to work at 7 (has to work night shift, yuck), so not sure what to do …  Last night, we had lobsters for Mother’s Day dinner – shout out to all mothers! – so tonight will necessarily need to be a bit more thrifty.  Maybe just throw together a pot of chili this afternoon and anyone/everyone can dip into it when they please.  That might be just the ticket!  Any other ideas would be greatly appreciated. … Read entire article »

What’s for dinner? – April 22, 2011

Well, it’s Good Friday and Beautiful Wife, Only Son and I will be heading down South to visit relatives for Easter.  It will be nice to visit our very dear NC relatives and will also be nice to have dinner cooked for me!  I love to cook and love to make delicious things for my family, but it’s nice to have it served to me every once in a while … But really, it’s all about family :=) We will leave tomorrow (Saturday) and come back on Monday, so we’ll still need a yummy meal tonight.  Only Son has been on Spring Break this week, so has mostly been hanging out with friends, having sleepovers, and being a care- and responsibility-free teenager – we’ve let him have his fun this week, … Read entire article »

What’s for dinner? – April 19, 2011

Zucchini Latkes I’m thinking of making something kind of light and simple for dinner tonight, but not sure what.  It’s kind of a cloudy day, though not chilly.  Beautiful Wife is making zucchini bread in the kitchen … and she just said that she has a fair amount of extra, raw, grated zucchini.  ”Can we make zucchini latkes?” she asks.  What an interesting idea! Took about two seconds to find a bunch of recipes online for zucchini latkes – most have some potato in the mix, and seem pretty similar to any other latke recipe, I suppose.  Here’s one that looks good – Zucchini Latkes – on the Food Network website.  I’ve also found a page called, “Not Your Grandmother’s Latkes”, with some interesting and different ways to serve them.  It mentions … Read entire article »

What’s for dinner? – April 18, 2011

Well, it’s a dreary, cloudy Monday and Only Son is on Spring Break so he’s around everyday – which is great and means I don’t have to pack his lunch this week!  He has lacrosse practice from 5-7 today, so we’ll eat when he gets home (Beautiful Wife is off today and I just finished helping her with a paper, yay!). I’m gonna’ keep it easy and delicious with my home-made chicken fingers.  I’ll look at what is at the store and may buy the already cut “chicken tenderloins” (especially if they are on sale) or may get the chicken breasts and cut them up myself.  Then I dredge in flour, dip in egg bath (beaten egg and a little water) and roll in a half/half mixture of regular bread crumbs … Read entire article »

It’s beautiful day in the neighborhood here in the DC area – sunny, 60s, nice … Starting to think about meal this evening and haven’t really had any inspirations.  Often, when I’m looking for a good idea, I go to one of my favorite resources – Rachel Ray!  I have a few actual, hard-copy cookbooks from her and decided to browse through them while watching a “Burn Notice” marathon on USA … Okay, I think I found it!  Something I can make and easily keep warm and then prepare individual portions when the time comes – Only Son has to go to work at 5:30 and Beautiful Wife is at work for a long day and will be home at 8-8:30ish.  So a “flexible” dish that can be made in advance … Read entire article »

It is a super-yucky day out – rainy, windy, chilly – and I’d like something for dinner tonight that will be warm and filling, but also easy, peasy to make.  I think I’ll be breaking out the crockpot again!  Fill it with something good and let it do it’s magic – when we’re ready for dinner, dinner will be ready for us!  But what … hmmmm … I think I have the solution.  In my email box just this morning is – wait for it – “Hassle-Free Crockpot Rigatoni” That sounds like just the trick!  It looks like you partially cook the pasta and then mix with browned ground beef, pepperoni, cheese, pasta sauce, chopped green pepper and onion and some sliced green olives. Beautiful Wife is off work today, but is working on a paper for school.  I am starting to think ahead about dinner tonight, but for some reason am fixating on lunch at the moment.  I have had a serious craving for a good burger lately, so I think I might suggest getting a couple of nice hamburgers for BW and me.  ”Burger Wars” in DC-area give consumers a wide choice of very good burgers – Five Guys, Big Buns, Elevation Burger, BGR Joint, BRGR Shack and more. It’s Monday – start of the week – should be a sort of good week.  Weather is getting nicer, Beautiful Wife has an extra day off and I’ve got a Pool Board Meeting on Thursday (okay, maybe that’s not so much fun).  Yesterday, I had mentioned a recipe I saw in the paper (which was apparently reprinted from Prevention Magazine) for a “Quick Chicken Divan”.  The ingredient list is easy (it uses a whole cooked rotisserie chicken) and Only Son likes broccoli, so I’m gonna’ give it a try tonight.  I think it’s one of the recipes that could turn out really well and be a keeper or one that is just sort of “okay” and fades away.  We’ll see! Okay, Sunday, Sunday – kind of lazy around here, reading newspapers and watching TV.  So what’s for dinner?  I wanted to do something easy and casual, so was thinking about an “Easy Chicken Divan” recipe I found in the paper (and cut out).  Not sure that’s it today, but do want to make it soon.  Hey, just noticed there are still a few nice, big, soft rolls in the bread bin – extra rolls from making “Screaming Eagles” last week.  If they don’t get used real soon, they’ll go bad, so maybe some sort of sub/hoagie/grinder would do the trick. Okay, it’s the weekend and have some freedom to do things – gonna’ wash the dog today and get her going on a supplement that is supposed to make her less itchy.  She’s an old girl (15 years) and has always been kind of an itchy/scratchy dog.  Some of it is fleas, but I think partly just skin, etc.  So this supplement is got all kinds of essential oils in it and is supposed to help her skin.  We’ll see … Looks like it will just be Beautiful Wife and me for dinner tonight.  Since I was thinking of splurging on our anniversary on Thursday, but didn’t, I think I’ll do it tonight.  I am in the mood for a steak – not sure what cut, but I’m thinking filet.  Have … Read entire article »
